Gluten-Free Recipes for my niece, Lauren Lardizabal Dado

This is the first time that one of my beloved nieces asked me for gluten-free recipes. The word, "gluten," which is literally the protein found in flour (from my "Principles of Food Preparation" class with the late Matilde Guzman in UP Diliman) and responsible for the fragile or sturdy foundation of bread or cakes, is a no-no for some people. Let's see how Lauren responds to my collection.
