On August 9, 2014, we hosted our third public pop-up at EMILY. This was easily the smoothest one yet, from my perspective — thanks largely to the hard work and prep of the owners and staff at EMILY. Without further ado…

  2. We tried something new this time, and that was rolling out dough and placing it directly in the pans. We had been doing something a bit more complicated previously that involved rolling, sandwiching between parchment, then cutting to fit. That was largely because we had only 8 pans, then 12. Now we have 16, so we can roll, pan, sauce, cheese, and stack in advance. Don't worry, though, they spend very little time in this state, so quality is not impaired.   6. Anyway, back to the lecture at hand. Someone at the pop-up mentioned he had ordered a Funghitown because he hadn't seen much of that one represented on IG or Twitter or Facebook. Well, let's fix that:

  10. That's a Margot-rita (no Romano), for longtime Friend of Slice Michael Piaker. He and his partner, Rachel, often come into Paulie Gee's, where I work once a week. There, too, he orders his Regina (Paulie's version of the Margherita) with no Romano. For the longest time at Paulie's, we pizzamakers wondered, "WHO DOES THAT!?!" Because it indicates someone who KNOWS there's Romano on the pie and can also TASTE IT. Not that it's not apparent, just that if you're eating pizza casually, you would probably just notice a nice sharpness and saltiness — you wouldn't necessarily be all, "DAMN, THAT'S ROMANO, MAN!" So when Michael came in and ordered a Margot-rita sans Romano, I INSTANTLY put two and two together and knew he was the Paulie's No Romano guy. Also, hey, PIZZA BUBBLE! Not sure how I feel about those. I personally LOVE them, but I know not everyone does. Not sure if I'll end up popping them or not. What do you think?

  12. Here's a nice-lookin' shot of a Love Supreme. I think I may have to reduce the size of the sausage chunks *just a bit.* Other than that, I'm happy with the looks of this one. The "frico ring" of cheese around the edge is just the right shade of golden-brown. This photo is actually from one of my colleagues at nycgo.com. It was fun to have my daytime and moonlight worlds meet.

  14. Here's an actual PHOTOGRAPH shot on Polaroid film by repeat guest @CaerusKaru. He came to the first pop-up with a sweet Polaroid SX-70 Land Camera and took a similar photo. This time he brought a "faster" camera — meaning its film was more light sensitive — and shot this one of me and Emily co-owner Matt Hyland. I really need to remember to brush the flour off my shirt before photos.

  18. I really liked the composition of this one. It's nice to see the pizzas partially eaten. Also, there's the EMILY kale salad up there. Try it. It's from the regular EMILY menu, so it's available all the time.

It's funny, because when I was doing Slice, the pizza blog, one of THE ABSOLUTE MUST-HAVE SHOTS I had all writers take was the "hole structure" shot so readers could see the crust's "crumb," or interior. "Civilians" don't really do that. Then again, Eater editor Hillary Dixler here isn't a civilian. Here, I love seeing the strings of cheese pulling away from the cut. That means our cheese is gooey, yet at the same time it's got some browning, which I think gives it flavor. Mission accomplished!

  22. I'll just end here with this staff pie we did at the end of the service. This is maybe my favorite part of the day — all the guests have been taken care of, the adrenalin or endorphins or whatever are giving me a nice "buzz," and the pressure to GET THINGS RIGHT is off. That's when we can do some experimental pies for the staff, shoot the shit, and talk about future Margot's Pizza plans. This is a staff pie that pretty much in pizza form represents the Margot's-EMILY collab — it's pure M'sP bar-pie base with the EMILY "Colony" pie topping combo: pepperoni, pickled jalapeños, a drizzle of honey. Good way to end the day.
