Margot's Pizza Pop-up No. 2

On July 19, 2014, we hosted our second public pop-up at EMILY. At some point, I feel like this will be routine and there will be no need to document things, but right now, we're still refining the overall process and it's all still new and novel, so here's some of the day's social stream.

  1. I'll start with what, for me, was the end of the event's food offerings. Here, I made a couple staff pies — the Lamar Deluxe (green peppers) and a Love Supreme.

  3. Let's rewind now. Each prix fixe lunch comes with a choice of EITHER a salad or a drink credit. Either, or — but not both. I heard from someone they thought it was both, so I'll clearly have to do a better job of making that clear. I want to be transparent up front rather than disappoint guests.

  5. This is the kale salad. It's on EMILY's regular menu and it has sort of become one of their signature items. For good reason. I never thought I'd enjoy raw kale, but this salad does it for me. This is what *I* would get if I were choosing among the salad options.

  7. Here's our Love Supreme pizza as captured by longtime Friend of Slice Dan Dickinson. I actually met Dan and Katie Dickinson through Slice more than 10 years ago. It was a pleasant surprise to see his name pop up in the ticket-buyer queue. I am a little displeased, though, that I let this pizza go out with that dark-red onion slice in the lower left quadrant.

  11. (Relatively) new friends dropped by, too. I've known Steph Goralnick (above) and Dylan McCollough (below) via blogs, Twitter, and now IG for a while now but only recently met them about a month ago. It was good to see them again.

  14. We make the sausage ourselves at Margot's so that we get just the right blend of seasonings, i.e., LOTS OF FENNEL. And it goes on in large chunks — not slices. This pizza betrays my Midwest roots.

  16. Here's our Margot-rita looking just about the way I'd like it to. Taking on just a bit of browning on the cheese but not too much. I heard from one guest that we could stand a bit more basil presence, and I might agree. We might have to add the Dom DeMarco basil scissors to our equipment list for the next go-round.
  17. I love this photo because it comes from our first REPEAT CUSTOMER! Shortly before tickets went on sale, Jen Clarke vowed she would get some. Witness this exchange: 
  18. She WAS fast. Sales opened at noon on July 5. Tickets were gone by 12:02pm.
  19. Granted, we have only 28 slots, so if we weren't selling out, there would be a problem. But still. I thought there was an error with the ticketing system when I refreshed the page shortly after noon and saw SOLD OUT.
